Ingredients:
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
3/4 teaspoon ground cinnamon
1/2 teaspoon dry ginger powder
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/4 cup applesauce
3 eggs
1/4 teaspoon salt
1 cup sugar
1/2 cup brown sugar
1/2 teaspoon vanilla
1 cup pumpkin puree
1/2 cup canola oil
Directions:
- Preheat oven to 350°F.
- Butter and flour an 8x4 inch loaf pan
- Beat sugar and oil in a large bowl to blend.
- Mix in eggs, pumpkin, and apple sauce.
- Sift flour, cloves, ginger powder, cinnamon, nutmeg, baking soda, salt, and baking powder into another large bowl.
- Stir into pumpkin mixture in 2 additions.
- Pour into the pan.
- Bake until tester comes out clean, usually takes 1 hour.
- Transfer to cooling racks and cool for 10 minutes.
- Turn out onto racks and cool completely.
